School's out for the summer!!

Dear Friends,

It's not yet summer officially in the U.S. but it is starting to feel like it is! It's warm enough to swim and the pools are OPEN! Yay! Most school's are out for the summer and life is getting busier and busier with family vacations and picnics and all of the fun stuff we do when it is finally warm outside. This winter seemed longer than any other in the past, at least for me, so I am thrilled to be back in my flip flops enjoying warm days and nights.

My diet tends to change a bit when the weather warms up as well and eating the produce fresh from the garden is so wonderful! Here is a peek at a yummy salad I made with fresh spinach and kale from the garden. I added grilled chicken breast, organic red peppers and avocado.



Speaking of summer foods...a few years back I gave a popsicle to my niece and these sweet words came out of her mouth..."Is it good for you? Or just good?" Don't you just love the honesty of children?! Here is a rough sketch I did to jot down the memory before I forgot. I will hopefully eventually turn this into an art print.
